Classic Pommes Anna - Simple French Gratin Potato Cake Recipe


In the recipe for "Potatoes Anna", I have always been unsure who "Anna" was.
I now have the answer.......Browsing through Julia Child's Mastering the Art of French Cooking, Vol. 2; I found this historical note about
 Pommes Anna: "It was created during the era of Napoleon III and named, as were many culinary triumphs in those days, after one of the grandes cocottes of the period.
Whether it was an Anna Deslions, an Anna Judic, or simply Anna Untel, she has also immortalized the special double baking dish itself, la cocotte a pommes Anna, which is still made and which you can still buy at a fancy price".
 Sounds like a mandatory piece of kitchenware for all dedicated chefs and cooks to me!!
This simple recipe is all in the preparation and presentation, and the use of very, very thinly sliced potatoes, that's the key to success.
 Since the dish is inverted, it is important that the first layer of potatoes be attractively arranged.
Select perfect slices, and overlap them carefully.
 It is best cooked in a copper or cast iron omelette pan.
If you don't have an "omelette pan" which is ovenproof, use a deep pie plate.
 Keep in mind the final shape makes the presentation.
A watercress or parsley garnish adds colour.
Serve warm and cut into wedges, like a cake or quiche.

SERVES 3 -4

    * 1 kg waxy potato, peeled and very thinly sliced
    * 225 g butter, melted
    * salt
    * fresh ground black pepper

   1. Pre-heat the oven to 200°C/gas 6.
   2. Put the potato slices in a colander and rinse under running water to get rid of the starch. Place on a cloth in a single layer and pat dry.
   3. Generously grease the base of an ovenproof pan or baking dish with melted butter.
   4. Arrange the potato slices in the pan in overlapping circles , brushing butter over each layer and seasoning as you go.
   5. Cover with greaseproof paper or a lid. Bake in the oven for 45minutes or up to 1 hour. Test with a skewer to see if the potatoes are done.
   6. Cooks Notes:.
   7. Cook this in a cast-iron, heavy-bottomed, stubby-handled frying pan that goes in the oven. Traditionally it should be lidded - mine isn't, so I use greaseproof paper.
  

 Historical Note:.
    Mrs. Landemare's original recipe is:.
 Potatoes. Fresh butter.
   Peel some potatoes and cut into very thin rounds the size of a florin. Wash in salted water and dry very well in a cloth. Well butter an omelette pan. Place a layer of potatoes on the bottom. Cover with oiled [melted] butter, pepper and salt. Repeat these layers until the pan is full and cook in a medium [350°F - 180C] over until brown [40-60 min.] Remove from the oven, turn out and cut into slices or serve whole in a dish.

Choc Mayonaise cake with Choc icing

Chocolate mayonaise cake

3 cups sifted flour
1 1/2 cups surgar
1/3 cup cocoa
2 1/4 tsp. baking powder
1/4 tsp. baking soda
1 1/2 cup mayonaise
1 1/2 cup water
1 1/2 tsp. vanilla

Sift flour with surgar, baking powder and baking soda in bowl.
Gradually stir in mayonaise, add water and vanilla
Bake at 350F or 180C  in 2 round cake pans that are greased and floured.
Cook til done. Cool in pan before frosting

Chocolate Frosting

3 tbsp. butter or margarine
2 oz. semi-sweet chocolate
1 1/4 cups powdered surgar
1/2 tsp. salt
2-4 tbsp. hot milk
1 tsp. vanilla

Melt butter and chocolate on top of double boiler.
Add vanilla, then alternately mix in powdered sugar with salt and milk.

Dump cake

 

1 Large can sliced peaches
1 box dry yellow cake mix
1 1/2 sticks of margarine
cinnamon and/or nutmeg

Dump can of peaches in oblong baking dish.
Sprinkle with cinnamon
Dump box of cake mix evenly over peaches.
Dot top with margarine and sprinkle top with cinnamon.
Bake at 350F or 180C til browned or it looks done.

Delicious!!!
Even better with some ice cream or whipped cream  on it.

1 stick of butter = 113.5 gr or 1/4 pound or 4 ounce or 1/2 cup or 8 tablespoons or 14 teaspoons 

and also remember that 1 lb = 454 grams

Chocolate water cake

2 cups of flour
2 1/4 cups of sugar
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
8 tbsp. cocoa
1 tsp.salt
1 stick melted butter*
2 eggs slightly beaten
2 cups of water

Mix dry ingredients well
add water, eggs and butter
batter will be thin
Pour into 9x13 pan
Bake at 350F or 180C 30-35 min. or until toothpick comes out clean.
After cooking and cooling, you can freeze half of the cake for later use.
A very moist cake.

* 1 stick of butter = 113.5 gr or 1/4 pound or 4 ounce or 1/2 cup or 8 tablespoons or 14 teaspoons

Shenyang, China

 

Seeing that we have a family member in Shenyang on business at the moment, I thought we would "visit" as well.

Sunset colours tint the white of these modern south facing apartments overlooking a lake in Shenyang, capital of Liaoning Province in NE China



When the top temperature for the day is still minus 10 degrees celcius then it seems a good idea to move around.

Cleaning a skyscraper


This is in central Shenyang the capital city of Liaoning Province.



Weeping willow trees surround this lake in the centre of Shenyang city which has around 7 million residents.
It is the centre for manufacture of cars including BMW and also aircraft.
Like many Chinese cities now, a lot of effort is being made to modernise and the pace it is happening here is astounding.

What better way to relax on a Sunday?

This park is very popular to hundreds of people.
Maybe locals making the most of the warm weather as this lake freezes over in a few months.
Without exception all who were being photographed today gave a big smile or friendly wave.



Shenyang,the largest city in Northeast China, is the political, economic, and cultural center of Liaoning Province.
It is also an important industrial base and a famous historical city.
It was the host city of the 2006 International Horticultural Exposition and venue for the football (soccer) matches of the 2008 Beijing Olympic Games.


Shenyang is located in the central part of Liaoning Province.
Its climate is relatively dry most of the year with spikes in precipitation during the summer months due to the influence of monsoons.
Temperatures vary as much as 10 degrees Celsius from daytime to night, and in winter they can drop below 0 degrees Celsius, so the smart traveler will plan to dress in layers.

Poor days pudding

1 cup sugar
2 eggs well beaten
2 tbsp. flour or corn starch
2 tbsp. vinegar
1 cup water

Combine in double boiler, stirring often til thickened.
Add 1/2 tsp. lemon extract and a small lump of butter
Stir well, can be eaten as pudding or pour into a baked shell.

Baked drum sticks

6-8 chicken drumsticks
1/2 cup mayonaise
2-3 tbsp. mustard
1 tsp. Italian seasoning
1/2 tsp. garlic powder
1/2 tsp. black pepper
1.4 cup grated Parmesan cheese
1 cup fresh bread crumbs
(made from 2-3 slices of fresh bread)

Rinse and pat dry the chicken

Mix the mustard and mayonaise together in one bowl.
In a separate bowl, mix the bread crumbs, Parmesan, Italian seasoning, garlic powder and black pepper.

Using a pastry brush, coat a drumstick liberally with the mayonaise/mustard mixture, then roll the drumstick in the bread crumbs.
Lay the coated drumstick on a baking sheet.
Repeat for all drumsticks.
Bake at 350* for 45 min. or until done through and juices run clear.

You can double this recipe and adjust the amounts for taste.

A green-banded snapping shrimp reveals its disproportionate weaponry after being discovered inside dead coral on Australia's Great Barrier Reef.

The teams used a wide variety of sampling methods, which included looking inside the hollow skeletons of old coral structures.


Samples were obtained by enveloping dead coral in a bag and chiseling the structures off at their bases to capture the animals inside.
A single such sample can yield more than 150 individual animals, the survey team said.


Not even this small, delicate seaweed species, Caulerpa cupressoides, escaped the notice of scientists cataloging coral reef inhabitants near Heron Island in Australia.




A comb jelly trips the light fantastic as it pulses off Heron Island on Australia's Great Barrier Reef complex.





A gelatinous "creature" pictured floating in the water column off Lizard Island in northeastern Australia is actually a colony of smaller animals called salpae.

These sac-like filter feeders can either float as individuals or can form long chains as they drift through the ocean feeding on plankton.


A pair of fan worms wave their feathery feeding arms to filter tiny particles from the water.

Scientists spotted the worms during a recent survey of reef-dwelling species at three sites in Australia.
The teams found hundreds of previously unknown animals, including colorful soft corals, tiny shrimp, and scavenging crustaceans.
Worms were also highlighted in the study, including a potentially new class of marine worm known as bristle worms, relatives of leeches and earthworms.


A species of sea slug, or nudibranch, makes an exotic addition to the coral reefs off Heron Island on Australia's Great Barrier Reef.




Soft corals--so-called because they lack the hard skeletons of reef-building corals--growing near Lizard Island in Australia.

 Few such crocs exist in the wild, yet 20,000 are born each year during the zoo's May-to-August hatching festival.



The patterns of azure, green, and gray that mottle the back of a blue whale and the patch of white on the tip of its flipper will last its whole life.
Such unique markings allow scientists to catalog individual animals.




Thermographic photography offers clues to where energy is being wasted in this older house in Connecticut.
Red and yellow patches indicate escaping heat, while new double-pane windows appear cool blue.

Lit from within by candles and "painted" with the glow of a flashlight, ancient sandstone structures called nawamis captivated photographer Matt Moyer with their strange beauty.
The buildings, dated to the fourth millennium B.C., are burial structures of the first known pastoral society, according to Israeli archaeologist Avner Goren.
 "We believe [they mark] the beginning of the lifestyle that traditional Bedouin of today still practice," he says.
Seventeen clusters of nawamis have been found, all in the southern Sinai region.
