BUTTERMILK CHOC CAKE

2 cups flour
2 cups sugar

1 cup water
175 grams butter
1/2 cup oil
1/4 cup cocoa
1 tsp coffee granules

1/2 cup buttermilk
2 eggs
2tsp vanilla essence
1 tsp bicarb

Mix flour and sugar together in a big bowl
Melt butter, oil, water and cocoa and coffee in the microwave for approx 3-5 mins
Add this hot liquid to flour and sugar and mix together
Add buttermilk to warm mixture and stir well
Add slightly beaten eggs to mixture
Add bicarb and vanilla

Pour into container and bake in oven for approx 40mins at 180 degrees Celsius (test with a knife, must come out clean).

Icing:
75 grams butter
2 tablespoons buttermilk
2 heaped tablespoons cocoa
¾ Bag icing sugar
5ml vanilla essence

Mix together, pop into microwave for 1 minute. Sift 3/4 bag of icing sugar into hot mixture and mix together. Add tsp vanilla essence. Immediately when cake comes out of oven, pour hot icing (reheat if neccessary in microwave for a few minutes) over hot cake.
