½ lb (250 Gram) butter
8 tablespoons cooking oil
5 teaspoons baking powder
8 tablespoons castor sugar
5 cups cake flour
Beat butter and sugar together until light.
Add cooking oil, eggs and vanilla essence and beat well until light and fluffy.
Add in dry ingredients.
Grate dough in a baking sheet and press firmly.
Spread jam and grate other half.
Sprinkle coconut and bake at 180°C.
